Weekend Brunch Ideas: 2 Ingredient Banana Pancakes

The kindest thing you could ever do to an old, brown banana...use it to make these delicious, quick and easy 2 ingredient banana pancakes! perfect for weekend brunch.

I bloody love weekends. Lay-ins, cuddles and long, lazy brunches (that someone else usually cooks) or breakfast in bed. Weekends are all about family and friends, good food, great wine, newspapers, walks, shopping, and other general loveliness.

Today, I decided to treat the people I love to a little bit of homemade brunch, in the form of two ingredient banana pancakes. Clearly, they think I went to loads of effort to whip up these delicious, soft, fluffy morsels, but no. In actual fact, they take less than 10 minutes from start to finish and yep, are made out of just 2 things. And I’m pretty sure you’ve already guessed one of them…

Here’s the rest of the info for this easy brunch recipe:

Recipe (serves 2)

  1. 1 ripe (or over-ripe) banana
  2. 2 eggs (medium size)

That is it. Seriously

Method

  1. Mash the banana.
  2. Whisk the eggs
  3. Mix together well.
  4. Heat a frying pan to a low/medium heat (I use a dash of olive oil and a small knob of butter)
  5. Place a large spoonful of the batter into the pan (my pan fits 3 at a time)
  6. Cook for 3 or 4 minutes, until the edges lift easily with a spatula and the cooked side is golden brown
  7. Gently flip…
  8. Cook for another few minutes on the other side

Then pop on a plate and enjoy!

This morning we enjoyed these with a little drizzle of maple syrup, but honestly, they’re yummy on their own or with whatever you can throw at them.

Of course, you can also add additional ingredients to the additional batter. I’ve thrown in a handful of blueberries, or for those not allergic, perhaps you could throw in some chopped nuts?

Experiment, and enjoy one of the quickest, easiest and most delicious brunch recipes you could imagine.

(They’re completely different to traditional pancakes, of course, but I promise, they’re equally yummy)
