Cooking up a storm with Hello Fresh…Day 2

Today, I have been left to fend for myself.

Unbelievable I know. But the man had to attend a work event, so I was left with a conundrum. Eat nothing and get very grumpy – or do my best (against Doctors orders, naughty JJ) to prepare one of the Hello Fresh recipes. It seemed silly not to at least try, and I knew it hadn’t exactly been complex stuff for him last night, so I gave it a go.

I took a look through the remaining four recipe cards and went for what looked like the easiest option – the Roasted Fennel and Goat’s Cheese Penne with Pea Shoots.

Again, there were just 7 ridiculously easy steps, in which the hardest bit was cutting through the Fennel. Seriously. For someone pretty much unable to use their upper body at the moment, that stuff is tricky! But the rest was plain sailing.

Step 1 : Chop Chop

Step 4 & 5: Roasted Fennel and Saucy Pasta

Roasted Fennel & Goat's Cheese Penne with Pea Shoots...Done!

I chopped and roasted the Fennel with just a touch of olive oil and seasoning, and simmered some pasta in water with a stock cube. Then, it was just a case of melting some delicious goat’s cheese with a touch of the pasta water, adding the roasted fennel, pasta and some pea shoots – and it was done. Simple stuff.

The results were great. I’m not usually one for vegetarian dinners, but this was tasty and filling and so easy, it made for a really enjoyable supper.

I am now absolutely exhausted, have dosed myself back up on painkillers and won’t be moving for the rest of the night…but at least I’m not hungry!
