So, I’m poorly again.
There are a number of things that I hate about being poorly, except from the actual “being poorly” part. You miss your friends. You get bored…a lot. And you can’t go to the shops to buy yourself comfort food because you’ll possibly pass out from exhaustion if you leave the house.
BUT…you still want treats! So I just found the most amazing (and quick) recipe for deliciously soft and chewy chocolate cookies that took me 15 minutes from idea to tummy…20 if you have patience and want to let them cool for 5 minutes. But who would do that???
As with all my recipes, this is super-simple but delivers fantastic results…so can be used anytime you need to whip something up for you, your friends, your kids. I’ve also whipped them up as a hangover cure for @HelenaFleur and me on Sunday mornings too. They’re too easy NOT to do.
You will need:
Equipment:
- Mixing bowl
- Scales
- Wooden spoon
- Baking tray
- Oven
Ingredients:
- 125g Butter (softened or spreadable)
- 100g Soft Brown Sugar
- 110g Caster Sugar
- 125g Self Raising Flour
- 1 x Egg (lightly beaten)
- 1 x Teaspoon Vanilla Extract
- Pinch Salt
- 100g Chocolate Chips/Smashed up choccy bar (or more, depending on your chocoholic levels)
Method:
- Preheat oven to 180 degrees (150ish in a fan assisted oven)
- Throw all ingredients (except chocolate chips!) into the mixing bowl
- Mix thoroughly until mix is part crumb/part dough. (It will take a minute or so of hand mixing until the ingredients start coming together as crumbs, then about another minute to start to form lumps of dough.)
- Add chocolate chips (don’t do before now or they will melt as you stir) and mix JUST until one lump of dough is formed.
- LICK SPOON
- Break off meatball/walnut sized pieces of dough and pop onto a non-stick baking tray (or one lined with baking paper/tin foil). Make sure they are evenly spaced as they will spread out as they bake.
- Bake for 7 minutes for soft, gooey, chewy cookies or 10 minutes for a crispier cookie.
And there you go!
When I say they’re delicious, I’m not kidding. They’re just as good as any you can buy from a Cookie stand or shop. When straight out of the oven they’re still quite doughy and bendy – but after a couple of minutes of cooling they’re just chewy perfection – perfect for tea dunking and comfort eating from sofa camp (which is essential when you’re not well. It involves duvet, cushions, remote control, tea/Lucozade/water and some good magazines.)
This is so incredibly easy. Obviously you could use a food processor mixer if you have one which would make it even easier, but its not necessary. I am shattered but was able to do this without any issue at all. There isn’t even a lot of washing up – just one bowl and a spoon. Can’t say fairer than that!
Of course, you can also change chocolate chips for any other fillings you like – raisins? Candied ginger? Chopped nuts? Or leave them plain if you don’t have any in the cupboard to add.
I just ate all eight in about half an hour…and am feeling much better already (LIE. I feel fat).
15 minute get well cookies? Absolute win x
(This is also a fantastic recipe to make in advance and keep in the fridge until ready. The mix makes about 20 cookies (depending on the size…) and I just make 8 or so at a time (as I will absolutely 100% eat them all) and keep the rest of the dough wrapped in cling film in the fridge until the boy gets home. If wrapped well/kept in an air tight container, it will keep for a few days…and you can freeze it too.)
