Paleo Lifestyle: Breakfast Burritos. Seriously Good…

From the Food Network

One of my favourite things about the Paleo is the fact I can still have a fry up of a morning and not feel even the slightest bit guilty. Good quality butcher’s sausages, proper bacon, fresh eggs, mushrooms, tomatoes – all allowed. A proper paleo breakfast. Brilliant.

However – even I know I can’t be eating a fry up every day. Well, I could I suppose, but I don’t want to. And while I also love a great vegetable omelette, or sausage and scrambled eggs – my favourite breakfast of all these days is a breakfast burrito.

NOW – of course we know that to make a burrito, we need a tortilla, and a tortilla is not allowed on the Paleo diet.

Well, a standard tortilla isn’t, anyway. But there is an option that is quick, easy, delicious and 100% ok for anyone following this eating plan. The best news is, depending how you make it, it can also be used as a pizza base or to wrap anything at all, so it’s an almost substitute for bread. Bloody brilliant!

Ingredients (yields 2 tortillas)

  • 100g almond flour
  • 1 free range egg
  • pinch of salt
  • 1 tbsp melted coconut oil (or butter, or olive oil, if you’re letting yourself have those)

Method (I only cook one at a time, sure you could do both!)

  • Preheat oven to 175°
  • Combine all ingredients in a bowl and mix thoroughly, then knead like a dough
  • Place baking paper or tin foil on a baking tray and grease with a little oil/butter
  • Divide mixture into 2 and keep half back in airtight container
  • Put remaining lump of dough onto greased sheet and place a piece of cling film over top
  • Roll out to your desired thickness, (cling film will stop rolling pin sticking) then remove cling film
  • Bake for 4-6 minutes (depends on your oven and thickness)

You’ll know when it’s done by testing texture. Mine are ready to use after 4 mins in a fan assisted oven – so yours may take a little more.

While the tortilla is baking – you can prepare your filling. I use pretty much whatever I have in the fridge mixed in with some scrambled eggs, and it is delicious! Try frying off a little pancetta with some sliced mushrooms and chopped cherry tomatoes – or you could add courgette, or spinach, or anything you like. I think that’s what I love most about this breakfast – it’s a great way to use up whatever you have to hand.

Hmmm. Just typing this has made me hungry. Know what my brunch today is going to be!

Please excuse the absolutely terrible photos on this post – snapped them on my phone as I couldn’t find the camera.
