This Little Lady's Quick and Easy Cookie Recipe (No Eggs!)…

I absolutely LOVE baking.

I don’t have the energy to do as much as I used to, and have found I’m much better off doing quick and simple recipes that trying to take on complicated longer bakes…or I just get frustrated without help. I also find that as  can’t nip out to the shops whenever I like these days, I don’t always have all the ingredients I need in the cupboards.

This doesn’t stop me if I’m in a baking mood though. Oh no. I just do what I can to modify the recipe and use what I have.

Often, this leads to complete and utter disasters. But sometimes, it works just great.

These amazing cookies is an example of how things go to plan. I didn’t have any eggs in the fridge, so made do without…

Star Shaped CookiesIngredients

  • 6oz self raising flour
  • 4oz soft butter
  • 4oz caster sugar
  • 1oz chocolate chips (or smashed up leftover Christmas chocolate)
  • NO EGGS!

Method

  • Preheat oven to 180°
  • mix all ingredients together in a large bowl
  • Either take meatball sized balls in your hands and squash into cookie shapes OR roll out the dough and cut with a cookie cutter
  • Space out on a tray and put in the oven for approximately 12 minutes
  • Leave to cool for a few minutes and eat while still warm!

These cookies should take you less than 20 minutes to make and pop into your mouth. 20 minutes, from start to finish.

How easy is that??

(Replacements can of course be made. I’ve used plain flour with baking powder, and wholemeal flour in the past. Plus, you can replace the crushed up chocolate with anything you fancy. Mix in some peanut butter, smash up some Smarties, pop in some raisins. Anything you like!)
